Goat’s Cheese and Ham Focaccia Sandwich with Apricot Jam

For the Apricot Jam:
- 500 g fresh apricots pitted and chopped
- 75 g sugar
For the Sandwich:
- 2 slices of focaccia
- 2 tbsp apricot jam
- 80 g wafer-thin ham
- Salt & pepper to taste
- Olive oil for grilling
- 1 tablespoon bacon fat or use more olive oil if unavailable
- 80 g soft goat’s cheese
- 1 handful fresh rocket arugula
- 1 teaspoon lemon juice
- 1/2 tablespoon extra-virgin olive oil
- Salt to taste
Make the Apricot Jam: In a saucepan, combine the chopped apricots and sugar. Cook over medium heat, stirring occasionally, until the apricots break down and the mixture thickens into a jam-like consistency, about 15-20 minutes. Set aside to cool.
Prepare the Sandwich Filling: In a small bowl, toss the rocket (arugula) with the lemon juice, extra-virgin olive oil, and a pinch of salt. Set aside.
Assemble the Sandwich: Spread 1 tablespoon of apricot jam on each slice of focaccia. Layer 80 g of wafer-thin ham on one slice of the focaccia. Spread the soft goat’s cheese evenly over the other slice of focaccia. Add the dressed rocket on top of the goat’s cheese, then season with a little salt and pepper.
Grill the Sandwich: Heat a skillet over medium heat and add 1 tablespoon of bacon fat (or olive oil if preferred). Once hot, place the assembled sandwich in the skillet and cook for 2-3 minutes on each side until the focaccia is golden and crispy, and the cheese begins to melt slightly.
