  • 1 cup granulated sugar or coconut sugar
  • 1 teaspoon ground cinnamon freshly ground preferred
  • 1 teaspoon ground cloves or allspice
  • 2 teaspoons baking powder ensure it's fresh
  • 2 large eggs or flax eggs for vegan option
  • 1/2 cup extra virgin olive oil or melted coconut oil
  • 1/2 cup whole milk or almond milk
  • 2 tablespoons orange zest or lemon zest for variety

For the Glaze

  • 1 cup confectioners’ sugar or powdered erythritol
  • 2 tablespoons fresh squeezed orange juice or lemon juice
  • optional Cointreau or Grand Marnier or omit for alcohol-free

Step-by-Step Instructions

  • In a large mixing bowl, sift together all-purpose flour, granulated sugar, ground cinnamon, ground cloves, and baking powder until well combined.
  • Make a well in the center and add large eggs, extra virgin olive oil, whole milk, and orange zest. Mix until a rough dough forms, then knead by hand for about 5 minutes.
  • Let the dough rest for 30 minutes.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Divide the dough into four equal portions. Roll each portion into a rope approximately ½ to ¾ inch thick and cut the ropes into diamond shapes.
  • Place the cookies on the baking sheet, spacing them about an inch apart.
  • Bake for 9 to 11 minutes or until the cookies are firm but slightly soft in the center.
  • Let the cookies rest on the baking sheet for 5 to 7 minutes, then transfer to a wire rack to cool completely.
  • In a medium bowl, sift confectioners’ sugar, then add fresh orange juice and optional liqueur. Stir until smooth.
  • Once the cookies are cooled, dip the tops into the glaze and allow excess to drip off before placing them back on the rack.
  • Let the glaze set for at least 12 hours at room temperature.

Notes

Ensure baking powder is fresh and allow cookies to cool completely before glazing.
