Preheat Oven: Preheat your oven to 400°F (200°C).
Season and Sear Chicken: Pat the chicken thighs dry with paper towels, then season both sides generously with salt and pepper. Warm the olive oil in a large, oven-proof skillet over medium-high heat. Place the chicken thighs skin-side down in the skillet and sear for 4–5 minutes until the skin is golden and crispy. Turn the chicken over and sear the other side for another 3–4 minutes. Transfer the chicken to a plate and set it aside.
Prepare the Garlic Parmesan Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn. Reduce the heat to low and add the heavy cream, Parmesan cheese, Italian seasoning, garlic powder, onion powder, and crushed red pepper flakes (if using). Stir until the cheese is melted and the sauce is smooth and creamy.
Bake the Chicken: Return the seared chicken thighs to the skillet, skin-side up, and spoon some of the sauce over the top. Transfer the skillet to the preheated oven and bake for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Garnish and Serve: Remove from the oven and sprinkle with fresh chopped parsley. Serve hot, spooning extra sauce over the chicken and your favorite side.
