Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or applying a light coating of grease.
Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, breadcrumbs, chopped parsley, minced garlic, beaten egg, dried oregano, salt, and black pepper. Pour in the milk and mix everything together until well combined. Be careful not to overmix, as this can make the meatloaves tough.
Form the Meatloaves: Divide the mixture into 4 equal portions. Shape each portion into an individual loaf shape and place them on the prepared baking sheet.
Top with Olive Oil and Cheese: Pour a bit of olive oil over the surface of each meatloaf. If using, sprinkle the grated mozzarella cheese on top of each loaf for an extra cheesy touch.
Bake: Bake in the preheated oven for 20-25 minutes, or until the meatloaves are cooked through and the internal temperature reaches 165°F (74°C). If you've added mozzarella cheese, it should be melted and bubbly by this point.
Serve: After cooking, take the meatloaves out of the oven and allow them to rest for a few minutes before slicing. Serve alongside your preferred side dishes, such as roasted vegetables or creamy mashed potatoes.
