For the Tzatziki Dressing:

  • 1 cup plus 2 tablespoons plain Greek yogurt
  • 1/2 cucumber grated
  • 2 to 3 garlic cloves pressed
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh dill
  • Salt and pepper to taste

For the Salad:

  • 2 cups chopped cooked chicken
  • 2 cups chopped romaine lettuce
  • 1 cup halved grape tomatoes
  • 1/2 cup sliced pepperoncini peppers
  • 1/2 cup sliced Kalamata olives
  • 1/4 cup chopped red onion

Instructions
 

  • Make the Tzatziki Dressing: In a medium bowl, combine the Greek yogurt, grated cucumber, pressed garlic, olive oil, and fresh dill. Season with salt and pepper to taste. Mix until well combined and creamy. Set aside.
  • Prepare the Salad Ingredients: In a spacious mixing bowl, combine the diced cooked chicken, chopped romaine lettuce, halved grape tomatoes, pepperoncini, Kalamata olives, and diced red onion.
  • Assemble the Salad: Drizzle the prepared tzatziki dressing over the salad mixture. Toss delicately to ensure all the ingredients are evenly coated with the dressing.
