- 3 whole eggs beaten
- 1 ½ cups sugar
- 1 cup flaked coconut
- 1 stick ½ cup butter, melted
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1 whole 9-inch uncooked pie shell
Preheat the Oven: Set your oven to 350°F (175°C) and allow it to fully heat up.
Make the Filling : In a large mixing bowl, whisk together the beaten eggs and sugar until well combined. Add the flaked coconut, melted butter, white vinegar, vanilla extract, and a pinch of salt. Stir until fully incorporated.
Assemble the Pie : Place the uncooked pie shell into a pie dish. Pour the coconut filling into the pie shell, spreading it out evenly.
Bake the Pie : Place the pie on the center rack of the oven and bake for 45–50 minutes, or until the top is golden brown and the filling is set. To check if it's done, insert a knife or toothpick into the center; it should come out clean.
