Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 bell peppers red, yellow, or orange, sliced
  • 1 medium onion sliced
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt or to taste
  • ½ teaspoon of freshly ground black pepper adjusted to your preference.
  • 1 cup shredded mozzarella cheese
  • Chopped fresh parsley or basil for a finishing touch optional

Instructions
 

Preheat the Oven:

  • Preheat your oven to 400°F (200°C) and lightly grease a baking dish.

Prepare the Chicken and Vegetables:

  • Place the chicken breasts in the baking dish. Drizzle with olive oil and season both sides with Italian seasoning, garlic powder, paprika, salt, and black pepper.
  • Arrange the sliced bell peppers and onions around and on top of the chicken breasts.

Bake the Chicken:

  • Bake the chicken and vegetables in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).

Add the Cheese:

  • Remove the baking dish from the oven and sprinkle the shredded mozzarella cheese evenly over the chicken and vegetables.
  • Return the dish to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Garnish and Serve:

  • Once the cheese is melted, remove the dish from the oven.
  • Add a sprinkle of freshly chopped parsley or basil for extra flavor if you like.
  • Serve the chicken with the roasted bell peppers and onions for a flavorful and healthy meal.
