Ingredients
  

  • 398 mL can of crushed pineapple thoroughly drained.
  • 8 ounces cream cheese softened
  • 2 cups unsweetened fine desiccated coconut plus extra for rolling
  • ½ cup graham cracker crumbs
  • 3- ounce packet pineapple-flavored Jello

Instructions
 

  • Drain the Pineapple: Ensure the crushed pineapple is very well drained to avoid excess moisture in the mixture. You can press the pineapple in a sieve or use a paper towel to remove as much liquid as possible.
  • Mix Cream Cheese and Pineapple: In a large bowl, combine the softened cream cheese and well-drained pineapple.
  • Add Jello and Graham Crumbs: Sprinkle the packet of pineapple-flavored Jello into the cream cheese and pineapple mixture, stirring well to ensure it’s evenly incorporated. Then, add the graham cracker crumbs and mix until fully combined.
  • Incorporate the Coconut: Add 2 cups of desiccated coconut into the mixture, stirring until all ingredients are evenly combined and the mixture is firm enough to roll into balls.
  • Shape the Balls: Take a small amount of the mixture (about 1 tablespoon) and roll it between your hands to form a smooth ball. Repeat with the remaining mixture.
  • Roll in Coconut: Place extra desiccated coconut on a plate, and roll each pineapple ball in the coconut until fully coated.
  • Chill and Serve: Place the rolled pineapple balls on a lined tray and refrigerate for at least 1 hour to firm up. Once chilled, serve and enjoy these tropical treats!
