For the Bars:
- 1 cup of butter softened
- 2 cups of sugar
- 4 eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp salt
- 1 can 21 ounces cherry pie filling
For the Glaze Optional:
- 1 cup powdered sugar
- 2 tbsp milk
- ½ tsp vanilla extract
Prepare the batter:
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Add the dry ingredients:
In a separate bowl, whisk together the flour and salt.
Gradually add the dry mixture to the wet ingredients, mixing until fully combined.
Assemble the bars:
Spread two-thirds of the batter evenly into the greased baking pan.
Pour the cherry pie filling over the batter, spreading it out evenly.
Drop spoonfuls of the remaining batter over the cherry filling, trying to cover as much of the surface as possible, but leaving some gaps for the cherries to peek through.
Bake the bars:
Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Allow the bars to cool completely in the pan.
Prepare the glaze (optional):
While the bars are cooling, make the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
Drizzle the glaze over the cooled bars for an added touch of sweetness.
