  • 8 large eggs
  • 1/3 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh tarragon or basil snipped
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 teaspoons olive oil
  • 1/4 cup chopped onion
  • 3 cloves garlic minced
  • 1 1/2 cups fresh asparagus cut into 1-inch bias slices
  • 2 tablespoons water
  • 6 ounces fresh or canned lump crab meat drained and flaked
  • 1/3 cup roasted red sweet peppers drained and chopped
  • 2 tablespoons fresh Italian parsley snipped
  • Bottled hot sauce optional

Instructions
 

  • Prepare Egg Mixture: In a medium mixing bowl, whisk together the eggs, milk, Parmesan cheese, fresh tarragon or basil, black pepper, and salt. Set aside.
  • Cook Aromatics: Heat the olive oil in a large, oven-safe skillet over medium heat. Add the chopped onion and minced garlic, cooking for about 2 minutes until they soften and become fragrant.
  • Add Asparagus: Add the asparagus to the skillet, along with 2 tablespoons of water. Cover and cook for 3-4 minutes, or until the asparagus is crisp-tender and the water has evaporated.
  • Add Crab and Peppers: Gently stir in the crab meat and roasted red peppers, allowing them to warm through for 1-2 minutes.
  • Combine with Egg Mixture: Pour the egg mixture over the vegetables and crab in the skillet, spreading it evenly. Sprinkle the snipped parsley on top for added flavor and color.
  • Cook Until Set: Cook the frittata on the stovetop over medium-low heat for 5-6 minutes, or until the edges begin to set. Preheat your oven broiler during this time.
  • Broil to Finish: Transfer the skillet to the oven and broil for 2-3 minutes, or until the top is golden and the eggs are fully set.
  • Serve: Remove from the oven, slice, and serve warm. Incorporate a splash of hot sauce if you like a bit of heat. Enjoy your elegant frittata!
