Cook the Noodles: Cook the noodles or spaghetti according to package instructions. Drain, rinse under cold water, and set aside.
Prepare the Sauce: In a small bowl, whisk together oyster sauce, Shaoxing wine, dark soy sauce, sesame oil, honey or sugar, and white pepper. Set aside.
Cook the Shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from the skillet and set aside.
Sauté the Vegetables: In the same skillet, heat the remaining tablespoon of oil. Add garlic and ginger, cooking until fragrant, about 30 seconds. Add the carrot, broccoli, cabbage, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Combine Ingredients: Return the shrimp to the skillet, followed by the cooked noodles. Pour the sauce over the top and toss everything together until evenly coated and heated through.
Finish and Serve: Add the green onions and toss briefly. Serve immediately, garnished with additional sesame oil or chopped green onions if desired.
