Ingredients
  

For the Sauce:

  • 2 tbsp oyster sauce
  • 2 tbsp Shaoxing wine Chinese cooking wine or dry sherry
  • 1 tbsp dark soy sauce
  • 1-2 tsp sesame oil
  • 2 tsp honey or sugar
  • ½ tsp white pepper

For the Chow Mein:

  • 250 g / ½ lb Asian medium egg noodles or spaghetti, cooked according to package instructions
  • 2 tbsp vegetable oil
  • 1 lb shrimp peeled and deveined
  • 2 cloves garlic minced
  • 1 tbsp ginger paste or grated ginger
  • 1 carrot cut into matchsticks
  • 200 g / 1 small head broccoli broken into florets
  • 70 g / ½ cup cabbage shredded
  • 50 g / ½ cup snow peas cut in half lengthwise
  • 4 green onions white parts sliced, green parts cut into 3-inch pieces

Instructions
 

  • Cook the Noodles: Cook the noodles or spaghetti according to package instructions. Drain, rinse under cold water, and set aside.
  • Prepare the Sauce: In a small bowl, whisk together oyster sauce, Shaoxing wine, dark soy sauce, sesame oil, honey or sugar, and white pepper. Set aside.
  • Cook the Shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from the skillet and set aside.
  • Sauté the Vegetables: In the same skillet, heat the remaining tablespoon of oil. Add garlic and ginger, cooking until fragrant, about 30 seconds. Add the carrot, broccoli, cabbage, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Combine Ingredients: Return the shrimp to the skillet, followed by the cooked noodles. Pour the sauce over the top and toss everything together until evenly coated and heated through.
  • Finish and Serve: Add the green onions and toss briefly. Serve immediately, garnished with additional sesame oil or chopped green onions if desired.
