- 1 pound mushrooms cremini, button, or a mix, sliced
- 4 cups fresh spinach
- 4 cloves garlic minced
- 1 tablespoon lemon juice freshly squeezed
- Salt and pepper to taste
- Optional garnish: Fresh parsley or red pepper flakes
Heat the Olive Oil: Heat a large skillet over medium heat and add the olive oil. Swirl the pan to coat the bottom evenly.
Cook the Mushrooms: Add the sliced mushrooms to the skillet in an even layer. Let them cook undisturbed for 3-4 minutes to develop a golden brown color. Then stir and continue cooking for an additional 2-3 minutes until the mushrooms are tender and any liquid they release has evaporated.
Add Garlic: Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to burn the garlic.
Add the Spinach: Add the fresh spinach to the skillet, stirring occasionally. Cook for 1-2 minutes, or until the spinach is wilted and tender.
Season and Add Lemon Juice: Sprinkle the dish with salt and pepper to taste. Drizzle with fresh lemon juice to brighten the flavors. Toss everything together to combine.
Garnish and Serve: Transfer the sautéed mushrooms and spinach to a serving dish. Garnish with fresh parsley or a sprinkle of red pepper flakes, if desired. Serve warm as a side dish.
