Ingredients
  

  • 3/4 cup rolled oats
  • 3/4 cup unsweetened coconut flakes
  • 1/2 cup dried cherries
  • 1/2 cup chopped pecans
  • 1/3 cup mini chocolate chips
  • 1/3 cup natural unsalted peanut butter
  • 1/4 cup honey
  • 1/8 cup chia seeds

Instructions
 

  • Combine the Dry Ingredients: In a large mixing bowl, add the rolled oats, coconut flakes, dried cherries, chopped pecans, mini chocolate chips, and chia seeds. Mix thoroughly to ensure the dry ingredients are evenly incorporated throughout.
  • Add the Wet Ingredients: Pour the peanut butter and honey into the bowl with the dry ingredients. Using a spoon or spatula, mix everything together thoroughly until the mixture is well-combined and sticks together.
  • Form the Energy Bites: Using clean hands, scoop out roughly a tablespoon of the mixture and shape it into a small ball. Continue this process with the rest of the mixture to form about 12-15 energy bites, depending on your preferred size.
  • Chill and Store: Place the energy bites in an airtight container and refrigerate for at least 30 minutes to help them firm up. Keep them stored in the refrigerator for up to a week or freeze them for longer storage.
