  • 2 cups cherry tomatoes halved
  • 1 cucumber peeled and sliced
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1 teaspoon of maple syrup optional, to add a subtle sweetness

Instructions
 

  • Prep the Vegetables: Rinse and halve the cherry tomatoes. Peel and slice the cucumber into thin rounds. Thinly slice the red onion.
  • Prepare the Dressing: In a small bowl, combine olive oil, red wine vinegar, salt, black pepper, and honey (if desired), whisking until smooth and well blended.
  • Combine the Salad: In a large bowl, combine the tomatoes, cucumber, red onion, and dill.
  • Serve: Chill the salad for 10-15 minutes for the flavors to meld, or serve immediately. Adjust seasoning if needed before serving.
