- 5 cucumbers thinly sliced
- 1 red onion thinly sliced
- 1 cup apple cider vinegar or substitute white vinegar, red wine vinegar, or rice vinegar
- ½ cup sugar or more, to taste
- ½ cup water
- 1 teaspoon salt
Prepare the Cucumbers and Onions: Wash and thinly slice the cucumbers into rounds. Peel and slice the red onion into thin, half-moon slices. Place the cucumbers and onions in a large bowl.
Make the Dressing: In a medium bowl, whisk together the apple cider vinegar, sugar, water, and salt until the sugar dissolves. Adjust the sweetness or acidity to taste if needed.
Combine and Marinate: Pour the vinegar dressing over the sliced cucumbers and onions. Toss gently to ensure everything is well coated. Cover the bowl and let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to develop. For best results, let it marinate for 1-2 hours.
Serve: Toss the salad once more before serving. Serve chilled as a refreshing side dish.
