Ground Beef Filling:
- 2 pounds lean ground beef
- 1 14-ounce can canned corn, drained
- 1 14.5-ounce can canned kidney beans, drained
- 2 cups salsa
- 1 1-ounce packet taco seasoning
- 1 cup water
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 ½ cups shredded cheese such as Colby Jack
Cornbread Topping:
- 1 box of Jiffy corn muffin mix weighing 8.5 ounces.
- 1 8.25-ounce can creamed corn
- 2 tablespoons milk
- ¼ cup sour cream
Prepare the Ground Beef Filling:
Preheat the oven: Preheat your oven to 375°F (190°C). Lightly coat a 9x13-inch baking dish with grease and set it aside for later use.
Cook the ground beef: In a large skillet over medium heat, cook the lean ground beef until browned and fully cooked, breaking it up as it cooks. Drain any excess fat.
Add the seasonings and vegetables: To the cooked ground beef, add the drained canned corn, drained kidney beans, salsa, taco seasoning, water, salt, pepper, and garlic powder. Mix well and allow the mixture to simmer for about 5 to 7 minutes.
