Ingredients
  

Main Ingredients:

  • 14 oz package prepared chow mein noodles or any medium-thickness noodles, preferably Asian-style
  • 1 lb chicken breasts thinly sliced
  • 1 small bag pre-cut coleslaw mix with cabbage and carrots
  • 2 stalks celery chopped
  • 5 green onions chopped (reserve 1/4 for garnish)
  • ¾- inch piece fresh ginger minced
  • 2 cloves garlic minced
  • 4 cups bean sprouts rinsed
  • Vegetable oil for stir-frying

For the Sauce:

  • ½ cup water
  • ¼ cup reduced sodium soy sauce
  • 2 tablespoons + 2 teaspoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons sesame oil

Instructions
 

  • Cook the Noodles: If your chow mein noodles require cooking, prepare them according to the package instructions. Drain and set aside.
  • Prepare the Sauce: In a small bowl, whisk together water, soy sauce, oyster sauce, brown sugar, rice wine vinegar, and sesame oil. Set aside.
  • Cook the Chicken: Warm 2 tablespoons of vegetable oil in a spacious wok or frying pan over medium-high heat. Add the thinly sliced chicken and cook for 5–7 minutes, stirring occasionally, until fully cooked and slightly golden.
  • Stir-Fry the Vegetables: Add another tablespoon of oil to the pan. Toss in the minced ginger, garlic, and celery. Stir-fry for 1–2 minutes until fragrant. Add the coleslaw mix and bean sprouts. Stir-fry for another 2–3 minutes until the vegetables are tender-crisp.
  • Combine the Ingredients: Return the cooked chicken to the pan, followed by the prepared noodles. Drizzle the sauce over the ingredients and gently stir to ensure everything is well-coated.
  • Finish and Garnish: Toss in the green onions, saving a few for garnish, and stir for another minute to blend the flavors. Remove from heat and garnish with the reserved green onions before serving.
