  • 1 teaspoon Chili Powder

Step-by-Step Instructions

  • In a large mixing bowl, combine 4 cups of thawed and drained frozen corn with ½ cup each of diced red and green bell peppers. Add in ½ cup of finely chopped red onion and stir until evenly distributed.
  • Fold in ½ cup of grated cheddar cheese, tossing gently until the cheese adheres to the vegetables.
  • In a separate bowl, whisk together ½ cup of mayonnaise, 1 tablespoon of fresh lime juice, 1 teaspoon of chili powder, and a pinch of salt and pepper.
  • Pour the dressing over the vegetable mixture and gently fold to coat all ingredients evenly.
  • Fold in ½ cup of crispy bacon bits and half of the chopped cilantro.
  • Adjust seasoning as needed with more salt, pepper, or lime juice.
  • Transfer the salad to a serving platter and sprinkle with remaining cilantro for garnish.
  • Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
