Preparation Steps

  • Start by washing two medium cucumbers under cold water, then slice them into thin rounds, keeping the skin on.
  • Peel and shred one large carrot into fine strips, then thinly slice half a red onion.
  • In a large mixing bowl, add the sliced cucumbers, shredded carrots, and red onions.
  • Chop a handful of fresh cilantro and sprinkle it into the bowl; gently toss the vegetables together.
  • In a separate bowl, combine a quarter cup of rice vinegar, two tablespoons of sugar, one minced garlic clove, and a pinch of red chili flakes; whisk until sugar dissolves.
  • Pour the dressing over the vegetables and toss the salad gently to ensure it's well coated.
  • Allow the Thai Cucumber Salad to marinate for about 10 minutes at room temperature.
  • Before serving, sprinkle crushed peanuts over the salad and toss in more fresh cilantro if desired.
