Ingredients
  

For the Casserole

  • 1 pound Ground Beef Can substitute with ground turkey or chicken.
  • 1 medium Onion Chopped.
  • 2 cloves Garlic Minced.
  • 1 package Frozen Spinach Thawed and drained.
  • 1 can Diced Tomatoes Canned crushed tomatoes work too.
  • 15 ounces Ricotta Cheese Cottage cheese can be a lower-fat substitute.
  • 2 cups Shredded Mozzarella Cheese Try cheddar or provolone for different flavors.
  • 1/2 cup Grated Parmesan Cheese Nutritional yeast can be used as a vegan alternative.
  • 1 tablespoon Italian Seasoning Oregano and basil can be used separately.

  • 1 cup Breadcrumbs Panko for extra crunch or gluten-free alternatives work.

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add the ground beef and cook for about 5-7 minutes, breaking it up as it browns.
  • Stir in the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
  • Add the thawed spinach, diced tomatoes, ricotta, mozzarella, Parmesan, Italian seasoning, salt, and pepper to the skillet. Stir and heat through for 5 minutes.
  • Transfer the beef and spinach mixture into a greased 9×13-inch baking dish.
  • Sprinkle breadcrumbs evenly over the top of the casserole.
  • Bake for 25-30 minutes until golden brown and bubbling.
  • Remove from the oven and let it rest for 10-15 minutes before serving.

Notes

Ensure the spinach is well-drained to prevent sogginess. You can prep ahead and store it in the fridge before baking.
