Ingredients
  

For the Crust

  • 2 cups Gluten-Free All-Purpose Baking Flour
  • 1 tsp Salt
  • 2 tblsp Granulated Sugar
  • 1 cup Unsalted Butter (cold and cubed) use vegan butter for dairy-free option
  • 6 tblsp Ice Water use cold water

For the Filling

  • 3 cups Peeled & Finely Diced Apples other fruits like berries can also be used
  • 1/2 cup Light Brown Sugar substitute with granulated or coconut sugar if needed
  • 1 tblsp Ground Cinnamon
  • 1/4 tsp Nutmeg can be omitted if unavailable
  • 2 tblsp Gluten-Free All-Purpose Flour (for filling) cornstarch can be used as an alternative
  • 1 large Egg (for egg wash) omit for vegan version or use plant milk instead

Instructions
 

Dough Preparation

  • In a large mixing bowl, combine gluten-free all-purpose baking flour, salt, and granulated sugar. Cut in cold, cubed unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until a dough forms. Shape the dough into a ball, wrap it in plastic, and chill in the refrigerator for at least 30 minutes.

Filling Preparation

  • Prepare the apple filling by combining peeled and finely diced apples with light brown sugar, ground cinnamon, nutmeg, and gluten-free all-purpose flour. Stir gently to coat the apple pieces evenly, then set aside.

Preheat Oven

  • Preheat your oven to 425°F (220°C).

Dough Rolling and Cutting

  • Roll the chilled dough out to a thickness of 1/8–1/4 inch. Cut 4-inch circles from the dough and transfer them to a greased muffin tin.

Filling the Muffin Tin

  • Fill each dough-lined muffin cup with the prepared apple filling, packing it in gently. Brush the edges of the crusts with egg wash or plant milk.

Baking

  • Bake for 20-24 minutes until the crusts are golden brown and the filling starts to bubble. Let cool before transferring to a wire rack.

Notes

Chill your dough for at least 30 minutes to ensure a flaky texture. Experiment with different fillings like berries or peaches.
