For the Peanut Dressing:
- 120 ml creamy peanut butter
- 80 ml rice vinegar or substitute with regular vinegar and add 1 tsp sugar
- 1 lime juiced
- 60 ml vegetable oil
- 1 tbsp sesame oil
- 3 tbsp soy sauce
- 3 tbsp honey
- 1 tbsp sugar
- 2 cloves garlic chopped
- 1 tbsp fresh ginger peeled and chopped (or 1/2 tsp ground ginger)
- 1 tsp salt
- Pinch of crushed red pepper flakes optional, for heat
For the Salad:
- 1 1/2 cups about 225 g cooked, shredded chicken
- 4 cups about 320 g shredded napa cabbage (or substitute with regular cabbage, iceberg, or romaine)
- 2 medium carrots julienned
- 1 English cucumber seeded and sliced
- 1 red bell pepper sliced
- 2 green onions sliced diagonally
- 1/2 cup 75 g peanuts, for garnish
- 1/2 cup fresh cilantro chopped
Prepare the Peanut Dressing: In a mixing bowl, whisk together the peanut butter, rice vinegar, lime juice, vegetable oil, sesame oil, soy sauce, honey, sugar, garlic, ginger, salt, and crushed red pepper flakes.
Assemble the Salad: In a large salad bowl, combine the shredded chicken, cabbage, carrots, cucumber, red bell pepper, and green onions. Toss to combine.
