Ingredients
  

For the Peanut Dressing:

  • 120 ml creamy peanut butter
  • 80 ml rice vinegar or substitute with regular vinegar and add 1 tsp sugar
  • 1 lime juiced
  • 60 ml vegetable oil
  • 1 tbsp sesame oil
  • 3 tbsp soy sauce
  • 3 tbsp honey
  • 1 tbsp sugar
  • 2 cloves garlic chopped
  • 1 tbsp fresh ginger peeled and chopped (or 1/2 tsp ground ginger)
  • 1 tsp salt
  • Pinch of crushed red pepper flakes optional, for heat

For the Salad:

  • 1 1/2 cups about 225 g cooked, shredded chicken
  • 4 cups about 320 g shredded napa cabbage (or substitute with regular cabbage, iceberg, or romaine)
  • 2 medium carrots julienned
  • 1 English cucumber seeded and sliced
  • 1 red bell pepper sliced
  • 2 green onions sliced diagonally
  • 1/2 cup 75 g peanuts, for garnish
  • 1/2 cup fresh cilantro chopped

Instructions
 

  • Prepare the Peanut Dressing: In a mixing bowl, whisk together the peanut butter, rice vinegar, lime juice, vegetable oil, sesame oil, soy sauce, honey, sugar, garlic, ginger, salt, and crushed red pepper flakes.
  • Assemble the Salad: In a large salad bowl, combine the shredded chicken, cabbage, carrots, cucumber, red bell pepper, and green onions. Toss to combine.
  • Dress the Salad: Pour the prepared peanut dressing over the salad mixture. Toss thoroughly until all ingredients are evenly coated with the dressing.
  • Garnish and Serve: Sprinkle with peanuts and fresh cilantro. Serve immediately and enjoy a delicious, crunchy, and refreshing salad!
