Ingredients
  

For the Salad:

  • 14 oz. cole slaw mix
  • 1 medium bell pepper thinly sliced
  • 1/3 cup chopped scallions
  • 1/3 cup chopped cilantro
  • For garnish use sesame seeds and roasted peanuts.

For the Dressing:

  • 1/4 cup rice vinegar
  • 2 tablespoons grapeseed oil
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 teaspoons maple syrup
  • 1 garlic clove minced
  • 1 teaspoon grated ginger

Instructions
 

  • Prepare the Salad Base: In a large mixing bowl, combine the cole slaw mix, sliced bell pepper, chopped scallions, and cilantro.
  • Make the Dressing: In a small bowl, whisk together the rice vinegar, grapeseed oil, peanut butter, soy sauce, sesame oil, maple syrup, minced garlic, and grated ginger. Whisk until the dressing is smooth and creamy.
  • Combine Salad and Dressing: Pour the dressing over the slaw mix and toss until all ingredients are evenly coated with the dressing.
  • Garnish and Serve: Sprinkle sesame seeds and roasted peanuts over the top for extra crunch and garnish. Enjoy right away, or refrigerate for up to an hour to let the flavors develop.
