Ingredients
  

For the Chicken:

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes optional, for heat

For the Sauce:

  • ½ cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup Parmesan cheese grated
  • ½ cup mozzarella cheese shredded

For Garnish Optional:

  • Fresh basil

Instructions
 

  • Prepare the Chicken: Season chicken breasts with salt, pepper, garlic powder, onion powder, and dried thyme.
  • Sear the Chicken (Optional): In a skillet, heat olive oil over medium heat. Sear chicken breasts for 1-2 minutes per side until golden brown.
  • Layer the Crock Pot: Place the chicken breasts in the bottom of the crock pot. Sprinkle the chopped sun-dried tomatoes over the chicken.
  • Make the Sauce: In a bowl, whisk together heavy cream, chicken broth, Parmesan cheese, and mozzarella cheese. Pour the mixture over the chicken and sun-dried tomatoes.
  • Cook: Cover and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender and fully cooked.
  • Serve: Garnish with fresh basil, if desired. Pair with rice, pasta, or creamy mashed potatoes to absorb the rich sauce.
