For the Chicken:
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- ½ teaspoon red pepper flakes optional, for heat
For the Sauce:
- ½ cup sun-dried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- 1 cup chicken broth
- ½ cup Parmesan cheese grated
- ½ cup mozzarella cheese shredded
Prepare the Chicken: Season chicken breasts with salt, pepper, garlic powder, onion powder, and dried thyme.
Sear the Chicken (Optional): In a skillet, heat olive oil over medium heat. Sear chicken breasts for 1-2 minutes per side until golden brown.
Layer the Crock Pot: Place the chicken breasts in the bottom of the crock pot. Sprinkle the chopped sun-dried tomatoes over the chicken.
