- 1 cup shredded zucchini well-drained
- 1 clove garlic finely grated
- 1/3 cup breadcrumbs
- 1/4 cup grated Parmigiano-Reggiano cheese
- 1 large egg
- 2 tablespoons of fresh chives finely chopped (or substitute with 1 tablespoon of dried chives)
- 1 tablespoon fresh parsley chopped (or 1/2 teaspoon dried parsley)
- 1 teaspoon fresh basil chopped (or 1/2 teaspoon dried basil)
- 1 teaspoon fresh oregano chopped (or 1/2 teaspoon dried oregano)
- A pinch of salt and pepper
- Tomato sauce for dipping
