  • 2 cups Zucchini (grated) Squeeze out excess moisture.
  • 1 teaspoon Salt
  • 1 Egg Can be replaced with a flaxseed or chia egg for vegan.
  • 1/2 cup All-Purpose Flour Use almond or chickpea flour for gluten-free.
  • 1/4 cup Parmesan Cheese (optional) Can omit for vegan.
  • 2 cloves Garlic (minced) Fresh is recommended.
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Paprika
  • 1/4 cup Parsley (chopped)

For Serving (optional)

  • Dipping Sauces Pair with sour cream, tzatziki, or marinara.

Preparation Steps

  • Wash the zucchinis thoroughly and grate them. Place in a colander and sprinkle with salt; let sit for 10-15 minutes.
  • Squeeze the grated zucchini to remove excess moisture.
  • In a bowl, whisk the egg and gradually add flour, garlic, black pepper, and paprika until combined.
  • Add drained zucchini and parsley to the mixture and stir until coated.
  • Shape the mixture into patties, about 2 to 3 inches wide.
  • Heat oil in a skillet over medium heat until shimmering.
  • Fry the patties for 3-4 minutes per side until golden brown.
  • Transfer to paper towels to drain excess oil and serve warm.
