Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • Combine melted unsalted butter and extra-virgin olive oil, stirring until well mixed. Brush the mixture at the bottom of a 9-inch round baking dish.
  • Thinly slice the russet potatoes using a mandoline or sharp knife until 1/8 inch thick.
  • Arrange the potato slices vertically in the baking dish, interspersing shallot slices between the layers.
  • Sprinkle coarse salt and red-pepper flakes over the potatoes and brush with the remaining butter and olive oil mixture.
  • Bake in the preheated oven for 1 hour and 15 minutes until golden brown.
  • Add fresh thyme sprigs on top of the potatoes and return to the oven for an additional 35 minutes.
  • Allow to rest for a few minutes, then slice and serve warm.

Notes

Best served warm as a delightful comfort food side dish. Can be made ahead and refrigerated before baking.
