  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Pound chicken breasts to an even thickness and set aside while preparing the dredging station.
  • Set up three shallow bowls: flour in the first, whisked eggs and mustard in the second, and panko, Parmesan, garlic powder, salt, and pepper in the third.
  • Dredge each piece of chicken in flour, dip into the egg mixture, and coat in the breadcrumb mixture.
  • Place coated chicken pieces evenly on the baking sheet and lightly spray with olive oil.
  • Bake the chicken for 25–30 minutes until golden brown and the internal temperature reaches 165°F (74°C).
  • Remove from oven and let the chicken rest for about 10 minutes to retain juices.
  • Prepare basil aioli by mixing mayonnaise, lemon juice, basil, garlic, salt, and pepper until smooth.
  • Serve the chicken topped with basil aioli alongside a crisp salad.
