- 2 pounds wild salmon fillet side
- 2/3 cup plain breadcrumbs
- 2/3 cup Parmesan cheese grated
- 1/4 cup fresh parsley finely chopped
- 4 cloves garlic minced
- 1/3 cup butter melted
- Salt and pepper to taste
- Lemon wedges for serving
Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
Prepare the Salmon: Place the salmon fillet skin-side down on the prepared baking sheet. Season lightly with salt and pepper.
Make the Parmesan Crust: In a medium bowl, mix the breadcrumbs, grated Parmesan cheese, chopped parsley, and minced garlic. Pour the melted butter into the mixture and stir until well combined and evenly coated.
Apply the Crust: Spoon the Parmesan breadcrumb mixture over the salmon, pressing gently to ensure it sticks and covers the entire surface of the fillet evenly.
Bake the Salmon: Place the baking sheet in the preheated oven and bake for 15–20 minutes, or until the crust is golden and crispy and the salmon flakes easily with a fork.
Serve: Remove the salmon from the oven and let it rest for a few minutes. Serve with lemon wedges on the side for a bright, tangy finish.
