  • 1 cup almond flour
  • ¼ cup chia seeds
  • ¼ cup coconut sugar or your preferred sweetener
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup coconut oil melted
  • 1 tsp vanilla extract
  • 1 egg or 1 flax egg for a vegan option

  • Preheat the oven: Start by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix the dry ingredients: In a medium-sized mixing bowl, combine the almond flour, chia seeds, coconut sugar, baking powder, and salt. Stir until all the dry ingredients are evenly distributed.
  • Prepare the wet ingredients: In a separate small bowl, whisk together the melted coconut oil, vanilla extract, and egg (or flax egg if using the vegan option). Make sure everything is thoroughly combined.
  • Combine wet and dry ingredients: Gradually pour the wet mixture into the dry ingredients and mix well until a dough forms. The dough should hold together but remain slightly crumbly.
  • Form the cookies: Scoop out about a tablespoon of dough at a time and shape it into a ball. Place the dough balls on the prepared baking sheet, flattening each one slightly with your fingers or the back of a spoon.
  • Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges of the cookies turn golden brown.
  • Cool and serve: Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy these crispy, flavorful cookies with a cup of tea or coffee!
