Ingredients
  

For the Chicken:

  • 4 chicken thighs bone-in, skin-on
  • ¼ cup buffalo sauce

For the Spice Rub:

  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon baking powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • teaspoon black pepper
  • teaspoon cayenne pepper

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by covering it with parchment paper or aluminum foil, then set a wire rack on top.
  • Prepare the Spice Rub: In a small bowl, combine the salt, chili powder, smoked paprika, baking powder, garlic powder, onion powder, black pepper, and cayenne pepper.
  • Season the Chicken: Pat the chicken thighs dry with a paper towel to remove any excess moisture (this helps the skin get crispy). Rub the spice mixture evenly over the chicken thighs, making sure to coat both the skin and the meat.
  • Bake the Chicken: Arrange the seasoned chicken thighs on the wire rack with the skin facing upward. Bake in the preheated oven for 35–40 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the skin is crispy and golden brown.
  • Toss in Buffalo Sauce: When the chicken has finished cooking, take it out of the oven. Toss the hot chicken thighs in the buffalo sauce, making sure they are evenly coated.
  • Serve: Serve the buffalo chicken thighs immediately, either on their own or with your favorite sides like celery sticks, ranch dressing, or blue cheese dip.
