Ingredients

For the Slaw:

  • 2 cups shredded green cabbage
  • 1 teaspoon salt or to taste
  • 1 apple diced
  • Juice of one lemon
  • 1 cup cucumber diced
  • 1/2 cup carrot julienned
  • 1/4 cup chopped spring onion whites
  • 2 tablespoons chopped fresh coriander leaves

For the Dressing:

  • 1/4 cup curd or plain yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 jalapeño finely chopped
  • 1/2 teaspoon cumin powder jeera
  • 1/2 teaspoon black pepper powder

Instructions

  • Prepare the Cabbage: Place the shredded cabbage in a large bowl. Let it sit for about 10 minutes to help soften the cabbage slightly and enhance its flavor.
  • Add the Fresh Ingredients: After the cabbage has softened, add the diced apple, lemon juice, cucumber, carrot juliennes, spring onion whites, and chopped coriander leaves. Toss gently to combine.
  • Make the Dressing: In a small bowl, whisk together the curd (or yogurt), mayonnaise, apple cider vinegar, chopped jalapeño, cumin powder, and black pepper powder until well combined. Taste and adjust seasoning as needed.
  • Combine and Serve: Pour the dressing over the cabbage mixture and toss until all ingredients are well coated. For best results, let the slaw sit in the refrigerator for 15-20 minutes before serving to allow the flavors to meld.
  • Serve and Enjoy: Serve the slaw chilled as a side dish, or use it as a topping for tacos, burgers, or sandwiches. Enjoy the refreshing crunch with every bite!
