Ingredients

For the Salad:

  • 14 ounces coleslaw mix 1 bag
  • 1 cup of fresh pea pods sliced at an angle.
  • 2 green onions sliced

For the Dressing:

  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon peanut butter
  • ¼ cup honey
  • ¼ cup rice wine vinegar
  • ½ teaspoon all-purpose seasoning
  • ½ teaspoon sriracha
  • 1 tablespoon fresh ginger minced
  • 1 clove garlic minced
  • ¼ cup vegetable oil

Instructions

  • Prepare the Salad: In a large mixing bowl, combine the coleslaw mix, sliced pea pods, and green onions.
  • Make the Dressing: In a separate bowl, whisk together the soy sauce, sesame oil, peanut butter, honey, and rice wine vinegar until smooth. Add the all-purpose seasoning, sriracha, fresh ginger, and minced garlic. Continue whisking while slowly adding the vegetable oil to emulsify the dressing.
  • Combine the Salad and Dressing: Pour the prepared dressing over the coleslaw mixture. Toss the salad gently to ensure the vegetables are well coated with the dressing.
  • Chill and Serve: For best results, refrigerate the coleslaw for 30 minutes to allow the flavors to meld together. Serve chilled and enjoy this fresh, tangy dish alongside your favorite main courses.
