Ingredients

  • 1 8 oz package cream cheese, softened
  • 1 8 oz container whipped topping (e.g., Cool Whip)
  • 1 cup miniature marshmallows
  • 1 cup sliced strawberries fresh or thawed from frozen
  • 1 cup chopped fresh pineapple drained if canned
  • ½ cup shredded coconut optional
  • ¼ cup chopped pecans or walnuts optional
  • 2 tablespoons sugar adjust to taste

Instructions

  • Prepare the Cream Base: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the sugar and continue to mix until well combined.
  • Fold in the Whipped Topping: Gently fold the whipped topping into the cream cheese mixture using a spatula until the two are fully incorporated and fluffy.
  • Add the Fruit and Mix-Ins: Stir in the miniature marshmallows, sliced strawberries, and chopped pineapple. If you are using shredded coconut and/or chopped pecans or walnuts, gently fold those into the mixture as well.
  • Chill and Serve: Once everything is well combined, refrigerate the salad for at least 30 minutes to allow the flavors to meld and the texture to firm up slightly. Serve cold as a sweet side dish or dessert, garnished with additional strawberries or nuts if desired.
