For the Dip

  • 2 cups Fresh Spinach Blanched and chopped
  • 1 can Artichoke Hearts Drained and chopped
  • 8 oz Cream Cheese Softened
  • 4 oz Goat Cheese Crumbled
  • 1/2 cup Parmesan Cheese Grated
  • 1 cup Mozzarella Cheese Shredded
  • 2 cloves Garlic Minced
  • 1/2 tsp Salt
  • 1/4 tsp Pepper Freshly cracked

For Serving

  • 1 box Crunchy Crackers
  • 2 cups Fresh Vegetables Carrots, celery, bell peppers
  • 1 loaf Toasted French Bread

Step-by-Step Instructions

  • Start by bringing a pot of water to a boil. Once boiling, add fresh spinach leaves and blanch for about 30 seconds until wilted. Quickly transfer the spinach to an ice bath to stop the cooking process.
  • In a large mixing bowl, combine the chopped, blanched spinach, drained artichoke hearts, softened cream cheese, crumbled goat cheese, grated Parmesan, shredded mozzarella, and minced garlic. Sprinkle in salt and freshly cracked pepper. Mix well until creamy.
  • Preheat your oven to 375°F (190°C). Lightly grease a suitable baking dish. Transfer the creamy dip mixture to the prepared baking dish and smooth the top with a spatula.
  • Place the baking dish in the preheated oven and bake for 25 minutes. For a golden top, sprinkle additional mozzarella over it and broil for about 5 minutes.
  • Remove the dip from the oven and allow it to cool slightly. Serve hot with crunchy crackers, fresh vegetables, or toasted French bread.

Notes

Always use fresh spinach for the best flavor and ensure cream cheese is softened before mixing.
