Ingredients
  

For the Pasta Base

  • 8 ounces Penne Pasta or fusilli or rigatoni
  • 2 cups Broccoli Florets fresh or frozen

For the Creamy Sauce

  • 2 cups Rotisserie Chicken shredded
  • 2 tablespoons Olive Oil can substitute with canola or vegetable oil
  • 1 medium Yellow Onion diced
  • 3 cloves Garlic minced
  • 1 tablespoon Butter optional for richness
  • 1 cup Heavy Cream can use half-and-half or coconut cream
  • 1 cup Chicken Broth preferably low-sodium

For Added Flavor

  • ½ cup Parmesan Cheese grated
  • 1 cup Mozzarella Cheese shredded
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Red Pepper Flakes adjust to taste

Step-by-Step Instructions

  • Boil a large pot of salted water, add penne pasta, and cook according to package instructions until al dente. About 3 minutes before the pasta is done, add broccoli florets.
  • Reserve 1 cup of pasta water and drain the pasta and broccoli, then set aside.
  • In a large skillet, heat olive oil and butter. Sauté diced onion for 4-5 minutes until translucent.
  • Add minced garlic to the skillet, cooking for about 30 seconds until aromatic.
  • Stir in heavy cream and chicken broth, increase heat to simmer for 2-3 minutes.
  • Remove from heat and whisk in Parmesan and mozzarella until melted. Season with Italian seasoning, garlic powder, and red pepper flakes.
  • Fold in drained pasta, broccoli, and rotisserie chicken into the sauce, adding reserved pasta water to reach desired thickness.
  • Add a cold knob of butter and stir until melted. Serve warm.

Notes

Store leftovers in an airtight container for up to 4 days; freeze for up to 3 months. When reheating, add a splash of cream or milk to restore creaminess.
