  • In a mixing bowl, combine 1/4 cup chia seeds, 1/2 cup peanut butter, 2-3 tablespoons maple syrup, and 1 cup of non-dairy milk. Stir until well combined and free from clumps. Let it sit for about 5-10 minutes.
  • Transfer the pudding mixture to a high-powered blender. Blend on high for 30-60 seconds until completely smooth and creamy. If too thin, let it sit for another 30 minutes.
  • In a microwave-safe bowl, add 1/2 cup dark chocolate chips. Melt the chocolate in 20-second intervals, stirring between each, until smooth. For a ganache, add 1 tablespoon of non-dairy milk while melting.
  • Pour the melted chocolate over the set chia pudding. Place it in the refrigerator and chill for at least 1 hour to allow the chocolate to set.
  • After chilling, take your creamy pudding out of the fridge and scoop out portions. Enjoy as a nutritious dessert or with fresh fruit.
