- 1 tablespoon oil or butter
- 1 cup onion diced
- 2 cloves garlic chopped
- 1 cup long-grain rice
- 2 cups water or vegetable broth for extra flavor
- 2 cups zucchini shredded
- 1/4 cup Parmigiano Reggiano Parmesan, grated
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons fresh dill chopped (or 1/2 teaspoon dried dill)
- Salt and pepper to taste
Sauté the Onion and Garlic:
