- 2 stalks celery chopped
- 1/4 cup chopped onions
- Salt and pepper to taste
- 2 cloves garlic minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 4 cups chicken broth
- 16 ounces of skinless boneless chicken thighs, diced into bite-sized pieces
- 2 cups of cauliflower rice approximately 8 ounces
