  • 1 lb shelled frozen mussels thawed and rinsed
  • 1 small onion minced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 5 tablespoons sour cream
  • teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons parsley finely chopped

Instructions
 

  • Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add the minced onion and garlic, and sauté for 2–3 minutes until fragrant and softened.
  • Cook the Mussels: Add the thawed mussels to the skillet. Cook for 3–4 minutes, stirring occasionally, until the mussels are heated through.
  • Prepare the Sauce: Reduce the heat to low and stir in the sour cream. Season with salt and pepper. Cook gently for 2–3 minutes, allowing the flavors to meld.
  • Garnish and Serve: Sprinkle the chopped parsley over the mussels and stir gently to combine. Serve warm as an appetizer, with crusty bread or over a bed of pasta or rice for a light main course.
