Ingredients
  

For the Chicken:

  • 1 ½ pounds 6-8 fillets boneless, skinless chicken thighs
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon salt
  • ¼ teaspoon cracked black pepper
  • 2 tablespoons olive oil

For the Sauce:

  • 1 tablespoon butter
  • 8 ounces brown mushrooms sliced
  • 4 cloves garlic minced (or 1 tablespoon minced garlic)
  • 1 tablespoon fresh parsley chopped
  • ½ - 1 teaspoon dried thyme adjust to taste
  • ½ - 1 teaspoon dried rosemary adjust to taste

Instructions
 

  • Season the Chicken: In a small bowl, mix the onion powder, garlic powder, dried thyme, dried rosemary, salt, and pepper. Rub this seasoning mixture evenly over both sides of the chicken thighs.
  • Cook the Chicken: In a spacious skillet, warm up some olive oil over a medium flame. Once it's hot, add the chicken thighs and sear them for 5-7 minutes per side, or until they achieve a rich, golden crust and are fully cooked. Once done, take the chicken out and set it aside for now.
  • Sauté the Mushrooms: Using the same skillet, drop in the butter and let it melt smoothly. Toss in the sliced mushrooms and sauté them for about 5-6 minutes, stirring occasionally, until they soften, release their juices, and turn a beautiful golden brown.
  • Prepare the Garlic Herb Sauce: Add the minced garlic to the skillet with the mushrooms and sauté for 1 minute until fragrant. Stir in the dried thyme, dried rosemary, and fresh parsley.
  • Combine Chicken and Sauce: Return the cooked chicken thighs to the skillet, spooning the mushroom and garlic sauce over them. Simmer on low for 2-3 minutes to meld the flavors.
  • Serve: Serve warm, garnished with extra parsley if desired. Pair with rice, pasta, or crusty bread to soak up the flavorful sauce.
