  • 1 can Coconut Milk Use full-fat for richness.
  • 4 cups Water or Broth Warm water or homemade broth work well.

For the Chicken

  • 3 cups Shredded Rotisserie Chicken You can use leftovers or raw chicken.

For the Noodles

  • 2 packs Ramen Noodles Discard seasoning packets.

For Seasoning

  • 1 teaspoon Turmeric Can be replaced with curry powder.
  • 1 teaspoon Sweet Paprika Smoked paprika can be used.
  • to taste Hot Sauce Adjust according to heat tolerance.

Step-by-Step Instructions for Creamy Chicken Noodle Soup

  • Boil a small pot of water and cook the carrot pieces for 4-5 minutes until slightly tender. Drain and set aside.
  • In a large pan, heat coconut oil and sauté the chopped red onion for 4-5 minutes until soft and translucent.
  • Stir in minced garlic and cook for 1 minute until golden but not burning.
  • Add shredded rotisserie chicken and chopped red bell pepper; sprinkle turmeric and paprika, cooking for 3 minutes.
  • Mix in the pre-boiled carrots and hot sauce, stirring thoroughly.
  • Pour in the coconut milk and water/broth, simmer without boiling.
  • Add ramen noodles, cooking for 3-4 minutes until tender.
  • Ladle soup into bowls and garnish with fresh herbs or lime juice.

Notes

Consider cooking the ramen noodles separately to prevent mushiness. Store leftovers in an airtight container for up to 3 days.
