- 1 tablespoon olive oil
- 30 g 2 tablespoons unsalted butter
- 350 g 12 oz chicken breast, diced
- 4 garlic cloves minced
- 75 ml ⅓ cup dry white wine
- 1 teaspoon Italian seasoning mix
- 400 ml 1 ½ cups chicken stock
- 180 g 6.3 oz cream cheese
- 500 g 1 lb gnocchi
- 100 g 3.5 oz baby spinach, roughly shredded
- 30 g ¼ cup grated Parmesan
- Freshly ground black pepper to taste
Cook the Chicken: Heat a splash of olive oil in a spacious skillet over medium-high heat. Add the diced chicken, seasoning it with salt and pepper. Cook for 5-7 minutes, turning occasionally until the chicken is browned and fully cooked. Once done, remove the chicken from the skillet and set it aside.
Prepare the Sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and cook for about a minute until it becomes aromatic. Pour in the white wine, allowing it to simmer for 2-3 minutes while gently scraping the caramelized bits off the skillet's surface.
Combine the Ingredients : Stir in Italian seasoning and chicken stock, bringing the mixture to a gentle simmer.
Cook the Gnocchi : Add gnocchi directly to the skillet. Stir to coat in the sauce and cook for 3–5 minutes, until the gnocchi is tender and the sauce thickens slightly.
Add Spinach and Chicken : Return the cooked chicken to the skillet. Stir in the shredded spinach and grated Parmesan, cooking until the spinach wilts, about 2 minutes.
Season and Serve : Taste and adjust seasoning with salt and black pepper. Serve hot, garnished with additional Parmesan and freshly ground pepper.
