  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Add the chopped onion, sautéing for 3-4 minutes or until it turns translucent and fragrant. Then, toss in the minced garlic, ground cumin, paprika, and optional cayenne pepper, cooking for another minute until the spices release their warmth.
  • Introduce the cubed chicken breast into the skillet, arranging it in a single layer. Allow the chicken to sear undisturbed for 5-7 minutes, flipping to achieve a golden-brown crust on each side. Season with salt and pepper.
  • Pour in 1 can of coconut milk, stirring gently to blend with the seasoned chicken. Increase the heat briefly to bring the mixture to a gentle simmer.
  • Stir in 1 can of drained diced tomatoes along with the juice of 1 lime. Lower the heat and partially cover the skillet, allowing everything to bubble lightly for 15-20 minutes until the chicken is fully cooked.
  • Fold in a generous handful of chopped fresh cilantro. Taste and adjust the seasoning with additional salt or lime juice.
  • Serve the Brazilian Coconut Chicken hot over a bed of steamed rice. Garnish with extra cilantro and lime wedges.
