- 1 pound slaw mix shredded green cabbage, red cabbage, and carrots
- ½ cup mashed avocado approximately 2 medium avocados
- ⅓ cup plain Greek yogurt
- 3 tbsp lime juice
- 1 tbsp sugar honey, or agave (optional)
- ¼ tsp garlic powder
- ¼ tsp chili powder
- ½ tsp salt
- ½ tsp black pepper
- ½ cup fresh cilantro chopped
- 2 tbsp green onion chopped
Prepare the Dressing : In a medium bowl, combine the mashed avocado, Greek yogurt, lime juice, sugar (or honey/agave), garlic powder, chili powder, salt, and black pepper. Mix thoroughly until the dressing reaches a velvety, smooth consistency.
Mix the Coleslaw : In a large mixing bowl, add the slaw mix. Drizzle the creamy avocado dressing over the slaw mixture, then toss everything together until the cabbage and carrots are well coated.
Add Fresh Herbs : Add the chopped cilantro and green onion to the coleslaw, stirring gently to combine. Taste and adjust seasonings if needed.
