Ingredients
  

  • 1 pound slaw mix shredded green cabbage, red cabbage, and carrots
  • ½ cup mashed avocado approximately 2 medium avocados
  • cup plain Greek yogurt
  • 3 tbsp lime juice
  • 1 tbsp sugar honey, or agave (optional)
  • ¼ tsp garlic powder
  • ¼ tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup fresh cilantro chopped
  • 2 tbsp green onion chopped

Instructions
 

  • Prepare the Dressing : In a medium bowl, combine the mashed avocado, Greek yogurt, lime juice, sugar (or honey/agave), garlic powder, chili powder, salt, and black pepper. Mix thoroughly until the dressing reaches a velvety, smooth consistency.
  • Mix the Coleslaw : In a large mixing bowl, add the slaw mix. Drizzle the creamy avocado dressing over the slaw mixture, then toss everything together until the cabbage and carrots are well coated.
  • Add Fresh Herbs : Add the chopped cilantro and green onion to the coleslaw, stirring gently to combine. Taste and adjust seasonings if needed.
  • Serve : Serve immediately or refrigerate for up to 1 hour to allow the flavors to meld. Enjoy as a side dish or topping for tacos, burgers, or grilled meats.
