Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup of almond butter or alternatively, peanut butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup dried cranberries chopped
  • 1/2 cup unsalted pistachios chopped
  • 1/4 cup ground flaxseed optional
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Mix the Wet Ingredients: In a large mixing bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.
  • Add the Dry Ingredients: To the bowl, add the rolled oats, chopped dried cranberries, chopped unsalted pistachios, ground flaxseed (if using), and a pinch of salt. Stir well until all the ingredients are evenly incorporated and the mixture starts to come together.
  • Chill the Mixture: If the mixture feels too sticky to roll into balls, place it in the refrigerator for about 15-20 minutes to firm up slightly.
  • Form the Energy Bites: Using your hands or a small cookie scoop, take about a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture to make about 12 energy bites.
  • Chill and Store: Place the formed energy bites on a plate or baking sheet lined with parchment paper. Chill for a minimum of 30 minutes to allow them to firm up. Once they're set, move the energy bites to a sealed container for storage.
