Step-by-Step Instructions

  • In a large pot over medium heat, cook diced bacon until crispy, about 5-7 minutes. Remove bacon and reserve fat.
  • In the same pot, sauté chopped onions in bacon fat for 3-4 minutes until translucent and fragrant.
  • Add gnocchi, broth, and cream, stirring gently. Bring to a simmer for about 5 minutes.
  • Reduce heat to low, stir in grated cheddar cheese until melted, about 2-3 minutes.
  • Fold in fresh spinach or kale; season with chili flakes, salt, and pepper to taste.
  • Ladle into bowls and top with reserved crispy bacon. Serve hot.

Notes

For best results, use freshly grated cheddar and allow the soup to rest before serving.
