Ingredients
  

For the Sliders:

  • 1 ½ pounds boneless steak such as ribeye, filet, or sirloin
  • Neutral oil as needed (for cooking the steak)
  • Kosher salt to taste
  • Freshly cracked black pepper to taste
  • 3 sweet onions thinly sliced
  • 9 slider buns
  • ¾ pound sliced Havarti cheese

For the Cowboy Butter:

  • 1 stick ½ cup unsalted butter, at room temperature
  • 4 garlic cloves minced
  • ½ lemon zested and juiced
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • ½ tsp dried thyme
  • 1 tsp red pepper flakes
  • 1 tbsp chives minced
  • 2 tbsp fresh parsley minced
  • Kosher salt and pepper to taste

Instructions
 

Prepare the Cowboy Butter:

  • In a medium bowl, mix the softened butter with the minced garlic, lemon zest, lemon juice, Dijon mustard, paprika, cayenne, thyme, red pepper flakes, minced chives, and fresh parsley.
  • Season the butter with kosher salt and freshly cracked black pepper to taste.
  • Set aside at room temperature while you prepare the sliders.

Caramelize the Onions:

  • In a large skillet, warm a tablespoon of oil over medium heat. Introduce the thinly sliced onions and sauté, stirring occasionally, until they turn golden brown and caramelized, which should take approximately 15-20 minutes.
  • Season with salt and pepper to taste.
  • Remove from the skillet and set aside.

Cook the Steak:

  • Pat the steak dry with paper towels and season generously with salt and freshly cracked black pepper on both sides.
  • Heat a cast-iron skillet or grill pan over medium-high heat and add a bit of neutral oil.
  • Sear the steak for about 3-4 minutes per side, or until it reaches your desired level of doneness.
  • Remove from heat and allow it to rest for 5-10 minutes.
  • Thinly slice the steak against the grain into bite-sized pieces, perfect for sliders.

Assemble the Sliders:

  • Preheat your oven to 350°F (175°C).
  • Arrange the bottom portions of the slider buns on a baking tray.
  • Layer each bun with slices of Havarti cheese, a generous portion of caramelized onions, and slices of steak.
  • Top with the remaining Havarti cheese slices and place the top halves of the buns on top.

Melt the Cheese and Serve:

  • Bake the assembled sliders in the oven for about 5-7 minutes, or until the cheese is melted and the buns are warm.
  • Remove from the oven and generously spread the cowboy butter over the tops of the buns.
  • Serve the sliders hot, with extra cowboy butter on the side for dipping if desired.
