Ingredients
  

  • 1/2 stick butter 4 tablespoons
  • 1 small sweet onion cut into thin wedges
  • 1 medium red potato unpeeled, diced into 1/2–3/4 inch cubes
  • 1/4 tsp coarse ground black pepper
  • 3 strips crisp-cooked bacon thinly sliced
  • 1/2 tsp finely minced garlic one small clove, or use a garlic press
  • 1 tbsp dry Hidden Valley Ranch Salad Dressing or Dips Mix
  • 1 14.5 oz can green beans, drained
  • More black pepper to taste
  • Salt optional, only after tasting

Instructions
 

  • Cook the Potatoes and Onions : In a large skillet over medium heat, melt the butter. Add the sweet onion wedges and diced red potato. Sauté for about 10 minutes, stirring occasionally, until the potatoes are lightly browned and beginning to soften.
  • Season and Add Garlic : Sprinkle the coarse ground black pepper over the potatoes and onions. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant.
  • Incorporate the Bacon and Green Beans : Stir in the sliced bacon and drained green beans. Mix well to evenly distribute the ingredients.
  • Add Ranch Seasoning : Sprinkle the dry Hidden Valley Ranch mix over the mixture. Stir to coat everything evenly in the seasoning.
  • Simmer to Combine Flavors : Reduce the heat to low, cover the skillet, and cook for another 8-10 minutes, stirring occasionally, until the potatoes are tender and the flavors meld together.
  • Taste and Adjust : Taste the dish and adjust the seasoning. Add additional pepper if desired and salt only if needed (bacon and ranch mix provide plenty of saltiness).
  • Serve : Transfer the dish to a serving bowl or plate. Serve warm as a side dish to complement roasted meats, grilled chicken, or any comfort food meal.
