Pan-Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, place the breaded chicken breasts in the skillet and cook for 2 to 3 minutes per side, or until they achieve a golden brown color. You don't need to cook them all the way through at this point, just get a nice golden crust.
Oven Time for the Chicken: Move the browned chicken breasts onto the lined baking sheet. Sprinkle the remaining Parmesan cheese evenly over each chicken breast, followed by the shredded mozzarella cheese.
Bake and Melt: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the cheese is melted and bubbly.
